This was a favorite for us over the holidays, and we simply haven’t stopped craving or making it!
It’s super easy, tasty, and good for you too.
4-5 sweet potatoes, cut into 1 1/4 pieces
1 tablespoons horseradish – grated
2 tablespoons olive oil
2 teaspoons rock salt
2 teaspoons ground white or black pepper
Dice potatoes, and place in large pot. Pour enough water into pot to come 1 inch above the potatoes. Cover and bring to boil. Turn down to medium heat and cook until potatoes are soft. Transfer to blender (or use immersion blender or manual masher). Add remaining ingredients and blend until smooth. Enjoy!
