Mashed Sweet Potatoes

This was a favorite for us over the holidays, and we simply haven’t stopped craving or making it!

It’s super easy, tasty, and good for you too.

4-5 sweet potatoes
2 clove garlic
2 tablespoons olive oil
2 teaspoons rock salt or sea salt
2 teaspoons ground white or black pepper

Cut potatoes into 1-2 inch chunks, and place in large pot. Pour enough water into pot to come 1 inch above the potatoes. Dice garlic and place in pot. Cover and bring to boil. Turn down to medium heat and cook until potatoes are soft. Transfer to blender (or use immersion blender or manual masher). Add remaining ingredients and blend until smooth. Enjoy!
